Welcome to the Blog today, Friends, I’m so happy you decided to visit. I’m sharing with you a one dish meal that turned out to be super easy and delicious. This makes a great easy Sunday dinner that doesn’t take much time at all. The original recipe is from
30-Minute, One-Pan Creamy Chicken Orzo
and I just followed the recipe with some small adjustments..
I was looking for something quick and that I already had the ingredients on hand. This worked out perfectly as I didn’t have to leave the house to buy anything. Yay!
I started with a high-sided, large pan. I cut two chicken breasts into chunky pieces and sprinkled 1 tsp of smoked paprika and 1 teaspoon of Italian seasoning over the chicken. I used salt and ground pepper to taste and then browned the chicken in 2 tablespoons of olive oil over a medium-high heat. This takes about 3-4 minutes per side. Remove the chicken to a plate.
Add 1 tablespoon of olive oil to the pan then add 1 cup of uncooked Orzo pasta and 5 cloves of minced garlic to the pan. Stir so the Orzo is covered in the oil, about 2 minutes.
Add 2 cups of chicken stock and about 5 oz. of cherry tomatoes cut in half. You will need an additional 5 oz. of cherry tomatoes cut in half later in the recipe. I actually used a cup of stock and a cup of white wine (a variation on the recipe). Bring to a boil then reduce to a simmer and cook for 5 to 10 minutes until Orzo is tender. Stir occasionally to prevent sticking.
Add 5 oz. of fresh spinach to the pan (about 2 – 3 handfuls) and the remaining 5 oz of tomatoes. Stir until the spinach is wilted.
Add 1/2 cup of heavy cream and 1/4 cup of basil pesto (can be homemade or store bought) to the pan and stir to combine thoroughly. Return chicken to the pan and maintain a low heat until chicken is heated through. Add salt and pepper to taste. Serve with parmesan cheese if desired.
I served this in a bowl for easy eating and it was delicious. The recipe takes about 45 minutes from beginning to serving. Enjoy!
