So I went out today and harvested some leaf vegetables and herbs to make a Spring Pesto.  <\/p>\n<\/p>\n<p>Pesto isn&#8217;t limited to basil.  In fact, my basil isn&#8217;t ready yet so I have everything but basil in this pesto.  <\/p>\n<\/p>\n<p>After washing the herbs and veggies&#8230;<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2019\/04\/030d2-97b16e_445db15cc77a47e9adc3259957d006d8mv2_d_3024_4032_s_4_2.jpeg?w=350\"> <\/p>\n<\/p>\n<p>&#8230;I took the stems off and put about 2 packed cups into the food processor with the cutting blade inserted.  Pulsed the greens a few times.<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2019\/04\/24a04-97b16e_217e515aa19e4822bac176ef1d995e11mv2_d_3024_4032_s_4_2.jpeg?w=350\"> <\/p>\n<\/p>\n<p>I added 1\/4 Cup Pine Nuts<\/p>\n<p>2\/3 cup Olive Oil<\/p>\n<p>1\/2 &#8211; 1 cup grated cheese ( I used a mix of Parmesan and Pecorino Romano)<\/p>\n<p>About 3 cloves of garlic minced<\/p>\n<p>Salt and Pepper to taste<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2019\/04\/4a834-97b16e_3cb1855eccd444aaab20ccae1040c668mv2_d_3024_4032_s_4_2.jpeg?w=350\"> <\/p>\n<\/p>\n<p>Pulse until thoroughly mixed and a creamy consistency.  You can add more olive oil if you like your pesto a little thinner.<\/p>\n<\/p>\n<p>The whole process takes about 1\/2 hour.  Now that I had the Pesto made I started on dinner.<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2019\/04\/599a7-97b16e_7da3aa49b39e4acf8793029b6102fb9amv2_d_3024_4032_s_4_2.jpeg?w=350\"> <\/p>\n<\/p>\n<p>I took some foil and doubled it over to give it some weight and sprayed the foil with olive oil.  Cut 1 peeled regular potato or Yukon Gold into thin slices and lay in a pile in the center of the foil.  Spray with Olive Oil and add salt and pepper to taste.<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2019\/04\/1571b-97b16e_33959d18987743acba9b95d3b7fb9701mv2_d_3024_4032_s_4_2.jpeg?w=350\"> <\/p>\n<\/p>\n<p>Place salmon filet on top of potatoes and drizzle olive oil over salmon.  Drizzle lemon juice over salmon.  Add 1 tablespoon of fresh pesto on top of salmon.  Close up salmon in foil making a packet.<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2019\/04\/cb700-97b16e_5f5f8de56ecd45f0afdd7ccdd2d38cbbmv2_d_3024_4032_s_4_2.jpeg?w=350\"> <\/p>\n<\/p>\n<p>Place packets in a pre-heated 425 degree oven for about 30 minutes or until salmon and potatoes are done.
