This is an interesting variation on the typical quiche.  You don&#8217;t have to make pastry and you create a meal with potatoes, eggs and vegetables.  It also tastes good.  <\/p>\n<p style=\"text-align:center;\">\n<p style=\"text-align:center;\">Red Pepper and Broccoli Quiche with Hash Brown Crust<\/p>\n<p style=\"text-align:center;\">\n<p>Ingredients<br \/>\n4 Cups frozen hash browns with water removed.<\/p>\n<p>1\/3 cup melted butter<\/p>\n<p>\nDirections<\/p>\n<p>Preheat oven to 425F<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/155b5-97b16e_f666f74dc1374042ac3d2fddccda73a3mv2.jpg?w=350\"> <\/p>\n<p>Defrost 4 cups of frozen hash browns and remove excess water by rolling in a clean tea towel and pressing until moisture is removed. You will have about 3 cups of hash browns now.<\/p>\n<\/p>\n<p>Add hash browns to a medium bowl.<\/p>\n<p>Add melted butter to hash browns and stir until butter is incorporated.<\/p>\n<\/p>\n<p>Add hash browns and butter mixture to a 9-inch pie plate. Hash browns should cover the bottom of the dish and come completely up and over the sides in a thin layer. Be sure there ar no holes in the hash brown crust.  <\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/e85d2-97b16e_09d02c5c33fa4234a4e33d58cd6d3f62mv2.jpeg?w=350\"> <\/p>\n<p>Place in pre-heated oven for 20-30 minutes until crust is browned.<\/p>\n<p>Remove from oven and set aside.<\/p>\n<\/p>\n<p>Quiche Filling<\/p>\n<\/p>\n<p>2 Cups vegetables cut into small pieces (I used broccoli and red pepper)<\/p>\n<p>2 Tablespoons chopped parsley<\/p>\n<p>1\/4 teaspoon nutmeg<\/p>\n<p>6 eggs<\/p>\n<p>1 and 1\/2 cups milk<\/p>\n<p>Salt and pepper<\/p>\n<p>1 and 1\/2 cus shredded swill cheese<\/p>\n<p>\nDirections<\/p>\n<p>Turn oven down to 375F.<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/e66e6-97b16e_9c7de321a9e141748c37d1c1414eb230mv2.jpeg?w=350\"> <\/p>\n<p>Steam vegetables for 1\/2 the cooking time. They will finish cooking as the quiche bakes.<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/f831d-97b16e_bb734c626b6146858d353129a7ca33ccmv2.jpeg?w=350\"> <\/p>\n<p>Combine the eggs, milk, and salt and pepper in a medium bowl with a whisk until fully incorporated.<\/p>\n<\/p>\n<p>Add the nutmeg and parsley and whisk to incorporate.<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/b1551-97b16e_5529163af830447ca55f304b1b3c0e61mv2.jpg?w=350\"> <\/p>\n<p>Place steamed vegetables in the bottom of the hash brown crust in a single layer. Sprinkle the shredded cheese over the vegetables.<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/1e467-97b16e_d5ba1d903d68430db90826209da1d4c1mv2.jpeg?w=350\"> <\/p>\n<p>Pour the egg mixture over the cheese and vegetables. Do not go over the top of the crust.<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/a1e75-97b16e_86ffac99d4f24e9885f251b9b8d4ac73mv2.jpeg?w=350\"> <\/p>\n<p>Place in the pre-heated oven and bake for 30 to 35 minutes until quiche is set and the middle doesn\u2019t jiggle.<\/p>\n<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/thriftingwonderland.com\/wp-content\/uploads\/2021\/04\/e4806-97b16e_3b8c061aa2454be5a16f02df2828f273mv2.jpeg?w=350\"> <\/p>\n<p>Remove from the oven and allow to cool for 3-4 minutes. Serve.<\/p>\n<\/p>\n<p>This is really delicious and a meal in one.
