Apple Salad

Welcome, Everyone, to the Blog today. I’m so happy you decided to visit. Summer is a special time for fresh salads and I’m always on the lookout for something colorful and tasty. This lovely, fresh apple salad certainly fits that description. It’s an easy mix of ingredients and I had everything on hand. Yay!

These are the ingredients I used but you can substitute depending on what you have available. I started with four small delicious apples. It’s probably better to use a crisper apple and many are available but I had these on hand. A couple of small bunches of grapes and two celery stalks and some spinach and arugula mix were added to the apples. You also need half a lemon, dried raisins or cranberries, pecans or walnuts and blue cheese or feta cheese. I used blue cheese for this salad.

Slice the celery into bite-sized pieces and do the same with the apples. Toss the apples in lemon juice from your 1/2 lemon. this will keep the apple from browning. Halve the grapes and combine in a salad bowl.

Add about 1/4 to 1/2 cup of raisins. Chop a handful of pecans and add that to the salad.

Add 1/4 to 1/2 cup of cheese crumbles and mix together. Then add your arugula and spinach mix to the salad and toss. The salad looks so colorful and pretty in the bowl.

I added a blue cheese dressing to the salad but you could certainly go with something lighter. The salad was served with salmon with salsa and rice. It was quite a nice combination. This easy salad is fresh and delicious. Hope you give it a try.
