What do you do when you have Snow Pea Pods from the garden? You make a modified stir fry. Happy to have you here today for this great fresh and easy recipe using pea pods, leeks and peppers with a few water chestnuts and some chicken.
Ingredients
12-20 Snow Pea Pods
2 skinless chicken breasts, cut into thin strips across the grain
1 can water chestnuts
1 leek, mostly the white cut into thin strips lengthwise
1 pepper, red looks best but orange or yellow will work, cut into thin strips lengthwise
salt and pepper to taste
1 teaspoon to 1 tablespoon grated ginger
1 clove garlic minced
2 tablespoons soy sauce
Avocado Oil
Cut 2 chicken breasts in thin strips. Salt and pepper to taste.
Cut leeks and peppers into this strips, remove stems from pea pods.
Add avocado oil to large pan on medium to medium high heat. Add chicken and brown on both sides. Cook chicken in two batches so strips are not overcrowded.
Add minced garlic and grated ginger to the chicken when cooking chicken on the second side.
Meanwhile:
Steam vegetables in microwave until crisp tender. In this steamer it took about 1 minute for water chestnuts and 30 seconds for other vegetables. You do not want soggy vegetables.
Add vegetables to pan with chicken on medium low heat. Stir until chicken is mixed in. Add Soy Sauce and toss with chicken and vegetables until heated, 1-2 minutes. Serve.
I served this over brown rice and it was delicious. Hope you give this one a try. Dinner in 30 minutes.
