Welcome everyone! It’s time to try your hand at a great addition to any barbecue or Summer meal……Cajun Sweet Potato Fries. If you don’t like the Cajun part, just salt the potatoes and you are ready to eat these delicious additions to a summer menu.
Cajun Sweet Potato Fries
Preheat oven to 475 F.
Wash and dry 2-3 sweet potatoes. (I leave the skins on for a more rustic look.)
Slice sweet potatoes into lengthwise slices (so they look like fries).
Place in a large bowl.
Sprinkle 2-3 tablespoons good extra virgin olive oil over sweet potatoes and toss until potatoes are covered.
Add 1 – 2 tablespoons cajun spice, sprinkling over potatoes.
Toss to cover.
Place sweet potatoes on foil-covered rimmed cookie sheet.
Place in center of oven for 10 minutes then remove and flip to cook other side of potatoes. Place back in oven for an additional 10 minutes.
Now they are done and you can enjoy.
