Hi Everyone! It’s that time of year when lettuce is coming up in the garden and the herbs are beginning to appear in abundance. I’m going to make a simple salad today with an herbal dressing made from the herb bombs from a few weeks ago.

Choose an attractive bowl that will fit in with your tablescape.

Then toss in red leaf lettuce, oak leaf lettuce, arugula, chives, marjoram, parsley and any other herbs or types of lettuce you might like or have on hand. Toss to mix.

Mix together 1/4 cup good balsamic vinegar. Add I/4 cup and a little bit (about 2 teaspoons) good quality olive oil. To that mixture add about 1 tablespoon defrosted herb bomb mixture (I used basil and parsley).

Add approximately 2 teaspoons of honey. Mix well before adding to the salad.

You can use whatever herb bomb mixture you like. Makes a refreshing addition to a Spring meal.
