Welcome Everyone to this cold and rainy day. Seems like we haven’t seen the sun in a long time. Guess we’ll just have to create some sunshine of our own to brighten up this dreary winter morning. To that end, I decided to make some French Toast for breakfast this morning. It’s Valetine’s Day so something special is required. I wanted a dish that was a little brighter in flavor….something that would remind us of sunny days and warm breezes. The scent and flavor of oranges seemed to be just what I needed.
I started with four eggs that I broke into a small bowl.
Next I grated orange zest from one medium orange. I added that to the eggs and then juiced the orange and added the juice to the egg mixture.
Using a whisk I beat the orange zest, juice and eggs together until thoroughly mixed. Then I added about a teaspoon of cinnamon to the egg mixture and whisked it together.
In a large flat bowl lay out your bread ( I used Italian but you could use brioche or French). Next pour the egg mixture over the bread and allow to soak in turning the bread once to make sure the other side is covered in egg mixture. Leave about 5 minutes.
Meanwhile heat your pan on Medium to medium-high heat and melt a little butter in the pan. Add the bread soaked in the egg mixture to the pan and brown on both sides. Place pan-toasted bread onto a serving plate. The rich golden color flecked with small bits of orange looks and smells delicious.
Set your table with a little red for Valentine’s Day. Add some champagne to toast your “honey” and some warm syrup and honey to pour over the French Toast.
